We're in quarantine and out of boredom and the pure need to be productive, I started to create in the kitchen. I have tried a lot of things, but I perfected this banana bread recipe and I want to share it with the world. It is probably a lot more basic than I would like to think, but it's really good.
- 110 g butter
- 110 g brown sugar
- 110 g regular sugar
- 2 eggs
- 30 ml room-temperature milk
- 1 tsp vanilla extract
- 220 g all-purpose flour (hladká)
- 1 tsp baking powder
- 1 tsp baking soda
- pinch of salt
- cinnamon to taste
- 3 overripe bananas
- chocolate chips, salted peanuts, and peanut butter
Mix all your dry ingredients in a medium bowl - that's flour, baking powder and soda, salt, and cinnamon. In a large bowl beat your eggs with butter and both types of sugar. Slowly start mixing in your dry mixture until incorporated. Mash your bananas with a fork to make a paste, and add milk with vanilla extract. Fold the paste into your batter, and add your mixins. Pour the batter into your molds and swirl in peanut butter. I like to draw a couple of stripes on top with the peanut butter. Bake for 45-50 minutes (depends on your oven) at 180°C.
